Baked Ham & Veggie Egg Cups

Are you looking for an easy and healthy breakfast option for your family?  This one is a hit in our household. Ham and veggie egg cups are a low carb grab-and-go breakfast that are perfect for a busy morning.  They come together in less than five minutes and are packed with flavor that each family member will love. They are super versatile as you can add any toppings of your choice. My kids love to add their favorite veggies and this makes them even more excited to eat them. It's also easy for those little hands to get involved in laying out the ham, cracking the eggs, and adding the toppings!

INGREDIENTS:
  • Thinly sliced deli ham (I cut the slices in half)
  • Large eggs (as many egg cups as you want to make)
  • Variety of veggies (chopped into small pieces)
  • Shredded sharp cheddar cheese (or cheese of choice)
  • Salt
  • Pepper
  • Cooking spray

DIRECTIONS:
  1. Preheat the oven to 374. Lightly mist muffin tins with cooking spray. Press a slice of ham into each cup of the muffin tin, arranging the edges to form a ham cup.
  2. Crack one egg into each ham cup.
  3. Top each cup with veggies of choice and shredded cheese.
  4. Place the muffin tins in the oven and bake for 15 minutes until the eggs are set and cheese is melted.

You can eat the egg cups immediately or can let them cool and store them in an air-tight container in the fridge (or freezer). Our family likes to make a large batch at the beginning of the week to enjoy all week long! Pop them in the microwave and you are good to go! Enjoy!

As you can tell by my pictures, I had little helpers in the kitchen with me today!  You can make these look nice and fancy, or make them like we did! Either way, they will taste AMAZING!

Fergen's Fancy Spaghetti Sauce

This afternoon the boys decided they wanted to make supper for the family, and of course chose their favorite, our homemade spaghetti sauce with pasta.  We have an amazing recipe given to us by some of our family friends and over time we have made a few alterations to make it out own.  I'm all about spice and extra veggies when I can, so we took this recipe up a notch!

Kedren and Oaklin went to town chopping up veggies, sautéing, browning the meat, and making the sauce. The best part of them growing up in the kitchen is that they know how to read recipes and measure all by themselves!  I'm making sure they know how to take good care of their wives some day;)

It turned out AMAZING and the kids went back for seconds!  This has become a staple in our home and in our family cookbook, and is one I hope gets passed down for years to come!  I used to think that making a homemade sauce was complicated until I actually tried it.  It's really not as hard as I thought and the best part is, I know what is actually in it!  This beats canned sauce BY FAR!

Fergen's Fancy Spaghetti Sauce Serving Size: 10 people -- Ready Time: 2 hours
Ingredients:
  • 1lb mild italian sausage, casings removed
  • 1lb ground beef, casings removed
  • 1 yellow onion, chopped
  • 2 cups diced carrots
  • 3 -4 garlic cloves, minced (or minced garlic from a jar)
  • 1-2 (28 oz) can diced tomatoes (depending on preference)
  • 2 (6 oz) cans tomato paste
  • 2 (15 oz) cans tomato sauce
  • 2 cups water (If simmering for more than an hour.)
  • 3 tsp basil
  • 2 tsp dried parsley flakes
  • 2 tsp brown sugar
  • 2 tsp ground pink himalayan sea salt
  • 1 tsp garlic salt
  • 1⁄2 tsp crushed red pepper flakes
  • 1⁄4 tsp ground black pepper
  • 1⁄4 cup red wine (we use a good cabernet)
  • 1 lb spaghetti or angel hair pasta
  • Grated or shredded parmesan cheese

Directions:
  1. In large stockpot, brown meat.
  2. Add onions & carrots and continue to cook, stirring occasionally until veggies are soft.
  3. Stir in garlic, tomatoes, tomato paste, tomato sauce and water.
  4. Stir in basil, parsley, brown sugar, pink himalayan sea salt, garlic salt, crushed red pepper, and black pepper.
  5. Stir well, bringing to a close boil.
  6. Stir in red wine.
  7. Simmer on low, stirring frequently for at least an hour. (We usually simmer for at least two hours, as a longer simmer brings out the flavors making for a better sauce.  Be careful not to let it burn!)
  8. Cook pasta according to package directions.
  9. Spoon sauce over drained pasta and sprinkle with parmesan cheese.
  10. Enjoy!

Monster Cookie Protein Balls

Bake the world a better place.  I'm pretty sure this is Baylic's motto in life because she loves bringing a smile to people's faces with her sweet treats.  She would bake a treat every day if we let her.  These don't actually require any baking, but sure help the sweet tooth!

We decided to make these to help when Daeston gets "hangry" (usually right before supper).  It's a real word in our household and a little added protein in these moments seems to help us all.

Let's be real, you can't go wrong with anything that has MONSTER COOKIE in the title.

Monster Cookie Protein Balls

Ingredients:
  • 2/3 cup of honey
  • 1 cup of all natural peanut butter (or almond butter)
  • 3 cups of oats
  • 1/4 cup of dark mini chocolate chips
  • 1/4 cup of white mini chocolate chips
  • 1/2 cup of M & M's
  • 1 scoop of protein powder (we use chocolate Shakeology)

Directions:
  1. Mix all together and use a scoop to form into balls.
  2. Store in the fridge

Great for:
  • A quick snack
  • Sack lunch
  • Pre-game snack
  • Travel snacks
  • Dessert
